Idyll Wine Co's Blanc de Blanc

Cremant Style

The Blanc de Blanc is a varietal made in the Cremant style with 12 months of lees contact to allow the true fruit flavour to shine. Fresh guava, lime and lychee aromas are combined with a touch of nutty complexity, resulting in a lively, dry and complex taste on the palate.

The Cremant style of winemaking is used to craft sparkling wine that has a lower level of carbon dioxide. This is a style that suits wines that are intended by the winemaker to allow the fruit characteristics to show through, and is typically softer and drier on the palate.

Methode Traditionelle

The method we use at Idyll Wine Co to craft our Geelong Blanc de Blanc is called ‘Methode Traditionelle’, which is a term that refers to how the bubbles are created. This is the same method that is traditionally used for the production of Champagne. 

Our winemakers create the base wine for our Blanc de Blanc by blending together several different chardonnays. The finished product has a variety of aspects that make the wine versatile including aroma, acidity, sweetness, flavour and palate weight. 

Sugar and yeast are then added to the base wine to create a second ferment. The wine is then bottled whilst the second fermentation is taking place. This converts the yeast and the sugar into alcohol and carbon dioxide, creating the bubbles that we capture in the bottle.

The bottles are then stored in a cool cellar for the yeast to consume all of the sugar and for the wine to mature. When ready, the bottles are then ‘riddled’ which is a process that involves slowly turning and tilting the bottle over a number of weeks to allow all of the sediment formed by the yeast to be lodged in the neck of the bottle. 

Once this process is complete, the bottle is carefully transferred to the bottling line where the neck is frozen and the cap is removed. The pressure of the bubbles in the bottle is enough to pop the plug of ice and yeast out of the bottle, which is then quickly turned the right way up, topped up with some additional wine, corked, labelled and packed.
